Crockpot creamy spinach

I know it’s been a long time since I’ve put anything up on here.  It’s been so busy lately I feel like a day to be home and do nothing is a precious gift!  So what did I do last night with that?  I mowed the lawn 🙂  This is a recipe that we tried out about a week and a half ago.  I wanted something that would be ready for us when we got home so that we could head out to another softball game, so I searched for summer crock pot recipes and took a few ideas from different recipes.

Probably not the prettiest picture, but it’s a crock pot 🙂  And we had already taken some out to eat before I got the picture in.

Here are the ingredients:

frozen spinach

cottage cheese

cream cheese

onion

garlic

butter

cheese – and lots of it!

Thaw and drain the spinach, chop the onion, mince the garlic.  Shred the cheese (or have a couple packages of pre-shredded if you don’t buy it in bulk like us!)

Sautee the onion and garlic until soft, mix them with the spinach

Put the spinach, onion and garlic into the crock pot.

Mix together the cream cheese, shredded cheese and cottage cheese, stir together with the spinach in the pot.

Add Parmesan cheese to the top to give it a nice crust, turn the crock pot on low, and enjoy when you get home from work!
