Defeat Garden

Frittata

I took my inspiration for this from a recipe called “confetti frittata.”  I made a few changes and here it is:

First, I started cooking  a pound of spicy ground sausage.

Then, I added one yellow pepper, one red pepper, and one red onion, all diced.

After that, I added a bunch of collard greens to add in some extra color.

Let all of that cook together in the pan for a while.

Next, I beat together 10 eggs and added some cheddar and mozzarella cheeses.  Pour it over the meat and veggie mixture, cover the pan, and let it cook until the eggs are set.

If you want to (and it’s not 85 degrees in your kitchen like it was in mine!) you can put the pan under the broiler to brown the top, but I skipped that part!

It was also delicious for breakfast this morning!

I just learned that I can make up egg concoctions and throw them in the crockpot. That’s been really nice for our family that is constantly on the go. I put it together and then the night owl amongst us can turn it on and it’s ready for breakfast.

What a great idea! Do you just use chopped vegetables, cheese, and eggs?
