Noodless Lasagna

This should really be called crustless pizza, that’s more what it tastes like 🙂

Here’s another recipe from Dana Carpenter’s book – check out for the book if you’re interested.

This is probably the boy’s favorite supper ever!  It’s really pretty easy, but don’t tell the boy because he would want it more often!

You will use:

1 pound (or so) ground meat (beef or turkey, both are good – sausage would be yummy, too)

1 package (or can) of mushrooms

Spaghetti sauce

about 1 1/2 cups shredded mozzarella

1/2 cup or so of ricotta cheese

1 egg

Italian seasoning


Cook the meat, add in the mushrooms and spaghetti sauce (or if you’re cheap thrifty like we are, use my secret recipe: a can of tomato sauce with Italian seasoning and garlic mixed in – sometimes I’ll add some cayenne.)

Mix together most of the shredded cheese, the egg, ricotta, and some Italian seasoning.

Put the meat mixture in the bottom of a square pan, spoon the cheese mixture on top of it.

Then layer some pepperoni over the cheese, spread the rest of the mozzarella over the pepperoni, and layer more pepperoni on top.

Cook it at 350 for about 1/2 an hour or so – until the cheese is bubbly.

OMG!!! That looks so good! And I think my kiddo would eat it too! I think this will be my first recipe to try .
