Apple Bacon Chicken

on:I got some chicken from one of the farmers at the farmer’s market downtown last weekend, and wanted to think of a new way to cook it up. I did some searching for chicken recipes and decided that I wanted to try apples with chicken and bacon. Tonight was really a night of experimenting and using what I had to make supper 🙂 It was fun, and it even tastes good!

on:This is the all-time favorite dessert in our house 🙂 The best part about it is that it’s soooo easy! Although we have gone through a few blenders in the last couple of years. It just doesn’t seem like they’re built as well as they used to be.
We use: frozen fruit, milk (or water if the man is making it), and ice
The girl is the lucky one who got the make these smoothies 🙂
Here’s step one – Frozen fruit in the blender – Step two – add milk
Step three – blend, and add ice if needed
Step four (for little brothers) – distract Mom by playing with fireworks
Step five – pour into cups and enjoy 🙂

on:In case you hadn’t noticed from some of my previous posts, it’s been a little busy around our house the past few weeks with running all over trying to make it to ball games! The man has been a HUGE help the last couple of game nights and cooked supper for us while I was running around getting the kids and getting home after work. This one is a carry over from when we ate bread that has really adapted itself well 🙂
Best Omelet Ever!

on:A few days ago, we were searching through the kitchen trying to figure out something to eat for supper, and decided on omelets. I love making them, but don’t always like eating them. To me, it really depends on the fillings! This one that I made for the man is, I still think, the best ever:
We had some leftover pepperoni from a salad night last week (I love pepperoni, I really do), and some ham that the kids have been making sandwiches with for lunch. The man picked it up at Sam’s Club, and it really tastes like ham 🙂 (I know, it’s ham, but most lunch meat doesn’t taste all that great, in my opinion)
So, I beat together some eggs, melted some butter in my egg pan (a Pampered Chef pan that I’ve had for years – one of these years, I’ll have to replace it, I don’t know what I would cook eggs in otherwise!), and added some Italian seasoning to the eggs instead of just salt and pepper. I also had some fresh basil on hand from Common Good Farm, so I minced two leaves and threw them in there, too.
After the bottom was set, I flipped the eggs over, and layered on some mozzarella cheese, a few pieces of pepperoni, and a chopped up piece of lunch meat. I tossed on a few more seasonings, and added about two spoons full of chopped canned tomatoes. I covered the pan and let it sit until the cheese was melted (a great trick – I use this all the time to speed up cooking times!) and took it out and enjoyed 🙂

on:I know it’s been a long time since I’ve put anything up on here. It’s been so busy lately I feel like a day to be home and do nothing is a precious gift! So what did I do last night with that? I mowed the lawn 🙂 This is a recipe that we tried out about a week and a half ago. I wanted something that would be ready for us when we got home so that we could head out to another softball game, so I searched for summer crock pot recipes and took a few ideas from different recipes.

on:It’s been a busy week in our house! We had three different ball games, summer program at the YMCA started for the kids, one went to a friend’s house to spend the night, and the other had a friend over at our house to spend the night. Honestly, I have a hard time remembering what I made for supper most of the week! Here’s what I made on Wednesday night, the one night that we were all home and didn’t have anything to do 🙂
